How To Make Brioche French Toast Casserole

Get the complete ingredients list and instructions from the recipe card below.

  1. Begin by lightly greasing a deep baking dish measuring approximately 13 x 9 inches (about 30 x 20 centimeters) with cooking spray. Spread the bite-sized brioche pieces evenly across the prepared dish.
  2. In a separate bowl, whisk together the large eggs, milk, vanilla, ground nutmeg, and a pinch of salt. Once combined, pour this egg mixture over the brioche in the prepared baking dish.
  3. Cover the French toast casserole and let it rest for about 30 minutes, allowing the bread to absorb the milky mixture. You can prepare this ahead and store it in the fridge for up to a day.
  4. Preheat your oven to 350 degrees F / 180 degrees C. Then, bake the French toast casserole for approximately 35 minutes.
  5. Just before the 35 minutes are up, peel and slice the bananas. Combine them with cashew nuts in a bowl and drizzle them with maple syrup.
  6. Remove the French toast casserole from the oven and carefully layer the maple-coated banana slices and cashews on top. Finish by sprinkling some brown sugar.
  7. Return the casserole to the oven and bake for an additional 10 minutes, or until the bananas and cashews are delightfully caramelized.

Tips For Success

  • Keep in mind that if you’ve chilled the dish overnight, it’s best to allow it to reach room temperature before baking.
  • Also, note that the casserole may puff up in the oven but will settle after resting for a few minutes.
  • Sprinkle with a dusting of powdered sugar just before serving!

Delicious Variations

Feel free to mix and match these variations or create your own signature Brioche French Toast Bake to suit your taste preferences and occasion.

  • Berry Bliss: Add a mix of your favorite fresh berries like strawberries, blueberries, or raspberries instead of bananas for a burst of fruity flavor.
  • Chocolate Delight: Sprinkle chocolate chips over the brioche pieces before pouring the milk mixture for a chocolatey twist.
  • Nutty Indulgence: Experiment with different nuts such as almonds, pecans, or walnuts to bring a variety of textures and flavors to your casserole.
  • Caramel Drizzle: After baking, drizzle caramel sauce over the top for an extra touch of sweetness and indulgence.
  • Spice It Up: Enhance the flavor profile by adding a dash of cinnamon or a hint of orange zest to the milk mixture.
  • Dried Fruit: Incorporate dried fruits like raisins, cranberries, or apricots for a chewy contrast.
  • Creamy Coconut: Replace some of the milk with coconut milk and top the casserole with toasted coconut flakes for a tropical twist.

Prep And Storage

  • Prep Ahead: To prepare as an overnight French toast casserole, follow the recipe instructions up to the point of covering the brioche with the egg-milk mixture. Instead of baking immediately, cover the dish tightly with plastic wrap or aluminum foil and refrigerate the covered casserole for up to 24 hours, allowing the bread to soak in the flavors.
  • Store: If you have leftovers, let the casserole cool to room temperature. Cover the baking dish with an airtight lid or foil. Store it in the refrigerator for up to 4 days.
  • Freeze: I recommend freezing individual portions rather than the entire dish for convenience. Wrap each serving tightly in plastic wrap or aluminum foil before placing them in a freezer bag or freezer-safe container. This Brioche French Toast Casserole can be frozen for up to 2 months.
  • Reheat: When you’re ready to enjoy your frozen portions, simply thaw them in the refrigerator overnight and reheat in the microwave or oven until warmed through. Enjoy your delicious breakfast without the morning prep!

FAQs

How do you keep French toast casserole from getting soggy? ›

It could be because of the bread you used. If the bread you start with is too soft (such as white sandwich bread), it won't absorb all of the wonderful custard that it should, and it might end up soggy. If you find yourself with a soggy casserole, for whatever reason, try baking it a bit longer until it firms up some.

What is one common mistake when preparing French toast? ›

If the pan isn't hot enough when you put your first slice in, the custard spreads out, forming a "foot" on the bottom of the French toast. When the pan is hot enough, the batter won't have time to seep; the custard will start cooking as soon as it hits the pan. Give the pan a light coating of neutral oil and butter.

Is it better to use milk or heavy cream for French toast? ›

We use whole milk because the higher fat content makes the French toast nice and creamy, but you can substitute heavy cream, almond milk, or even coconut milk. The flavors will change a little, but the end result will still be delicious!

Is it better to cook French toast fast or slow? ›

Cooking it low and slow lets the bread soak up even more flavor. Stuffed French Toast: Chocolate, fruit, cream cheese or savory ingredients can all be stuffed inside French toast for extra flavor.

Why does my homemade French toast taste like eggs? ›

If the balance is off and you include too many eggs or not enough milk, the finished French toast will have a scrambled egg-like flavor. When scaling this recipe up or down, keep in mind that you need 1/4 cup of milk for every egg.

What happens if you soak French toast too long? ›

The first is using fresh bread, which soaks up too much of the egg mixture and doesn't cook through, remaining eggy and soggy in the middle. Leaving the bread in the egg mixture for too long is another route to soggy French toast.

How do I know if my French toast is done? ›

"You know when your French toast is done when the center is set and doesn't have a runny consistency once cut," Oliveira says. If you're cooking a thinner French toast or omitted eggs from your soaking liquid, a quick pan-fry will do the trick, with 3 to 6 minutes on each side.

What's the difference between Texas French toast and French toast? ›

Quite simply, Texas French toast is exactly what it sounds like, French toast that has been made using the extra thick slices endemic to Texas toast. Since the cut of bread is so thick, it allows for greater absorption of the egg and cream mixture and longer frying times.

Why is my breakfast casserole soggy? ›

Frozen potatoes might release too much liquid, which could water down the casserole. Covering the dish with aluminum foil for the first part of the bake time helps the casserole heat through to the center without drying out on top. Remove the foil for the last half of the bake time so that the top can crisp up.

How do you keep a casserole from drying out? ›

I like to heat a casserole in the oven covered in foil so that it doesn't dry out. If the dish has a crispy topping such as breadcrumbs/butter, crispy onion rings, etc., I take the foil off for the last ten minutes or so to crisp the topping.
