Today’s recipe for Sausage and Kale Sauté comes after a bit of a hiatus.Regular posting is a little tough lately because my job is very busy and my commute is just as long as ever. But G’s commute just got a LOT shorter. Yay! He is no longer schlepping into New York City everyday on the train. Now that he works much closer to home our lives are already easier. Whew! This new recipe is a great one for when he makes dinner: fast and easy and perfect for a weeknight dinner. It’s also great to make ahead and take to the office for lunch.

The Dr. Oz Show

Before we get to the recipe I want to share an interesting happening. Have you heard of Dr. Oz? I’m sure many of you have. He’s a successful cardiologist and popular author and TV host. Well, one of his producers has been recruiting people for an upcoming episode featuring the Paleo Diet. They reached out to me with a few questions on my Paleo success story. The only problem is the questions focus a lot on total weight loss. The request was for “before” and “after” photos, total weight loss, size before and size after, etc… They also asked about medical condition symptom reversal but the focus of the show seems to be mainly about weight loss. My paleo success is primarily a health story. I don’t really have a remarkable “before” picture. So I submitted my “after” photo and told my Paleo story and we shall see if they are still interested.

On the Paleo Spirit Facebook page I posed the following question,

“Aren’t the health benefits of Paleo just as important as dramatic weight loss?”

Here are a few of the answers I received:

Absolutely!!!! I believe they can be (and in my case are) interrelated. Having Multiple Sclerosis, Irritable Bowel, and being overweight, I am living proof of the multiple benefits of choosing to live a Paleo lifestyle. I was super sick and terribly weak and those were my motivators, for sure. Now, fourteen months and 45 pounds later, my MS symptoms are almost non existent and I have not had one digestive flare up. So as far as I’m concerned, the health benefits are the driving force, with weight loss being the (grain free, refined sugar free) icing on the cake!!! – Michele

It will be a few days before I find out if they will have me on the Dr. Oz Show. Even if I am not one of the selected guests, my hope is they will focus primarily on the health benefits of Paleo with the weight loss aspects featured as just another great side effect. No matter what happens, only good can come from the word about Paleo getting out to the masses.

Sausage and Kale SautéRecipe

This sausage and kale dish is SO good! If you think kale is only good as a garnish you may doubt that declaration. But please consider that sausage can make almost anything taste good. For me, kale is a favorite food so I would eat it even without the sausage. The great thing about this particular recipe is how easy it is. You only need four ingredients and it takes very little time. My two boys even ate this sausage and kale dish and didn’t just pick out the sausage!

Here’s what you need:

Ingredients

  • 1 pound sausage
  • 1 bunch organic kale
  • 1 medium onion, diced
  • 1/2 red bell pepper, chopped

Instructions

  1. Remove sausage from its casing and brown in a large pan.
  2. Add the diced onion and continue cooking on medium until the onions are soft.
  3. Remove the spine from the kale and chop into bite size pieces. Add the kale to the pan with the sausage and onions and stir and cook until it turns bright green and softens to your taste. (Between 5-10 minutes)
  4. Remove sausage and kale mixture from the heat, stir in the chopped red bell pepper.
  5. Serve warm.

Come on. Give kale a chance!

Kale saute main dish

Ingredients

Scale

  • 1 pound sausage

    Here again this is what I find so disturbing about Dr. Oz and mainstream media when it comes to health and weight loss. They get it all backwards. The truth is, you don’t lose weight to get healthy, you get healthy to lose weight!

    I have not even tried Paleo as of yet, but am now considering it. I looked at the Kale Sausage Recipe and I think I would love it, but not so sure my husband would after a long, starving day of work. He would most likely say, “I’m still hungry,” by the end of the meal. Anything I can add that would make it heartier, or possibly he may just have to eat more or get used to it and deal with it:)

      I make something like this and stuff it into the halves of a baked acorn squash. I am primal, not paleo, so I top it with shredded cheese and stick it back in the oven to melt. Even my husband says it is very filling. Very yummy!

        That’s a great idea. It can use more bulk so I’ve added chunks of cooked butternut squash. But your method sounds more interesting and pretty.

          I actually find this quite filling, surprisingly. You can increase amount of sausage meat if you want. I also often add some sliced mushrooms which add to the bulk of it.

      You would just have to make sure you get sausage that does not contain those ingredients. It can be hard to find in a grocery store. I get sausage from local farms that just contain pork, salt, pepper and sage, for example. I’ve also found some store made sausage at the grocery store that did not have a lot of ingredients I can’t have. You may have to ask for it. Good luck.

      I have found a delicious turkey sausage, casein, soy and gluten free. It is available for me at GFS (Gordon Food Service). Labeled All Natural Fully Cooked Turkey Sausage, a product of Jones Dairy Farm. I use it in recipes and add fat or oil from some other source, as it will needed in the recipe calling for raw sausage. Really really Delicious!

        I often make my own sausage. Get ground pork or turkey or whatever you want and add in the seasonings, food process if you want a less crumbly texture, but it doesn’t really matter for this recipe.

    Made this but was lacking red pepper so used cremini mushrooms instead. Also added about 1 1/2 teaspoons dijon mustard to the sausage while browning to give it that extra kick mmmm!

    I bought some kale and had no idea what to do with it so I googled paleo kale recipes and found your recipe. I just finished making it and it is so delicious! Thank you so much! Also, the only sausage I had was farmer John sausage in the lb tube, after reading the comments I realized that I need to get sausage without the extras added. New to Paleo and just learning! I guess it’s still better than eating a bunch of starch and it tastes wonderful, so I will now know for next time. Thx for the post!

    This Sausage and Kale Saute was out of this world Yummy. Im on day 5 of Whole 30 and so far the best dish i have made. Only thing i did different was add fresh garlic
    So good. Never thought i would like kale

    YUM!! just added some black pepper and red pepper flakes and sauteed the sausage (niman ranch sweet italian cut into rounds) in a bit of grassfed butter. amazing!!

    Thank you so much for this recipe. It’s been a life-saver a zillion times! It’s easy, filling and satisfying. So much flavor something so so simple. I almost always keep the ingredients for this dish on hand for a night where I want something quick and hearty. I think I found it searching for sausage, kale recipes. YUM!

    I made this last night with some yummy sun dried tomato/basil chicken sausage from Trader Joe’s. My husband loved it and he’s never had kale. I was thinking next time I may add some mushrooms. Love it!

    I searched on google for paleo recipes with kale since I did not know what to do with this bunch I had. I have been trying paleo only for a month so far. I don’t like kale that much, but I try to eat some since it’s a very good source of nutrients and I need to vary the veggies I eat. This recipe was very good on its own, and very easy to make.
    If you are like me and don’t like kale but want to eat healthy, try chopping the kale into smaller pieces, and cook it for the whole 10 minutes to make it softer.
